Guacamole
Whether you are lazying in front the TV, hosting friends over for dinner or throwing a large party, it's always Guacamole time! Some like it spicy some like it mild, it is a 100% approved starter enjoyed by everyone in the family. The ingredient list is short and easy to find in any supermarket. Don't forget to have good chips. If you have a fryer, take the time to fry tortillas cut in 3-4 slices and add a dash of salt. Homemade Guacamole and Chips will always impress your guests.

Ingredients:
- 2 Ripe Avocados
- 1/2 Lime
- 1 cup Cilantro - yields 1/4 cup finely chopped
- 1 medium size Tomato
- Serrano Pepper (for spice / optional)
- Salt
- 1/4 of a medium Red Onion
Instructions:
- Rinse Vegetables and fruits thoroughly
- Finely Chop the Cilantro (chop some of the stem too, it tastes great), red Onion, Tomato and Pepper
- If you have a molcajete, grind the cilantro, pepper with the lime juice. Otherwise mix the finely chopped cilantro, onion and tomato in a bowl with the lime juice. Let it sit. Just watch that your guests don't eat your pico de gallo before you finish the guacamole preparation!
- Cut the avocados in half, pit them and peel them. Use a large spoon to cut and carve out the avocado pulp and add it to the Pico de Gallo Mixture.
- Use a fork or the spoon to mash up and mix everything together
- Serve freshly made! We recommend leaving the avocado pits in the guacamole, some say it keeps it longer from oxidizing
- Enjoy with a homemade Margarita and some fresh Chips!
