In 2024, we had the honor to host chef Cosme Aguilar for a day of cooking avocado based recipes. Critically acclaimed Michelin Star chef, he was the first Mexican Restaurant to earn a Michelin Star with Casa Enrique. He opened this Long Island City restaurant in a quiet neighborhood street with his brother Luis Aguilar and partner Winston Kulok in 2012. Inspired by his mother's homecooking, Chef Cosme created a traditional yet diverse and refined menu with many dishes coming from his native region of Chiapas, Mexico.

Chef Cosme always loved cooking but was not a formed chef. He had the chance to learn from talented chefs starting in the NYC restaurant business as a porter and working his way up.

Miguel went to Casa Enrique during its first opening week and met both Luis and Cosme then. They quickly became close friends. At that time, Miguel was still working in finance. In 2014, Miguel started his avocado ripening and wholesale distribution business. Casa Enrique was one of the first customers he served. To this date, Miguel has faithfully been providing Chef Cosme with perfectly ripe avocados and fresh citrus on a daily basis.

Chef Cosme recently opened a new restaurant called "Quique Crudo" on Bedford st. The cozy restaurant serves patrons around the bar. The fresh menu focuses on ceviche and staple dishes from Casa Enrique.
