Chef Cosme's Family style Tuna Ceviche with Avocado Salsa

Ingredients
- 2 Lbs fresh Tuna
- 1/2 cup Canola or Grapeseed oil
- 2 Ripe Avocados
- 2 Tsp Salt
- 1/2 bunch of Cilantro
- 1 Habanero pepper
- 1/2 cup sour cream
- 2 cups Ice
- 1 Orange for zest
- 1 Lime for zest
- 1 Lemon for zest
- 2 Thinly sliced radishes for plating
- Chopped Chives or Sprigs of Cilantro for plating
- 1 Serrano pepper for plating
- Thinly sliced Red Onion for plating

Rinse all produce. Blend peppers, oil, salt, cilantro including the stems. Add cream, avocados and ice and blend until smooth.

Cut the Tuna in small one bite cubes. Place in mixing bowl. Add a pinch of salt, orange, lime and lemon zest. Mix lightly with a spoon.

Use a spoon to spread the salsa on a serving plate. Place the tuna cubes evenly on the salsa bed. Place the thinly sliced radishes, a few serrano pepper slices, chives or cilantro for final touch. Serve immediately for freshest taste.
