Light, crisp, and so refreshing! This Cucumber & Avocado salad is the perfect fresh dish to add to any meal. Make sure to use a semi ripe avocado to keep a good texture. Crisp and smooth at the same time. We love it!

Ingredients

  • 1 Semi Ripe Avocado
  • 2 Scallions
  • 1 english Cucumber
  • 2 Tbsp Lemon juice
  • Fine Salt
  • Red Pepper Flakes or Spicy Oil
  • Sesame Seeds

Instructions

  1. Prep the scallions by rinsing, cutting in fine slices and reserving into a bowl filled with cold water and ice. This will keep them fresh and crisp
  2. Peel the cucumber. Half lengthwise, remove the seeds. Slice the cucumber into half inch pieces. Reserve in a bowl. Add 1 teaspoon of salt and toss the cucumbers until covered by salt evenly. Let the cucumber "sweat" for 5 min.
  3. Cut open, pit and peel avocado. Cut each half into bite size "cubes". Add the lime/lemon juice.
  4. Rinse the cucumber swiftly, pat dry with a papert towel. Mix avocado and cucumber together. Add the olive oil, scallion and optional red pepper flakes. Serve or refrigerate right away. We recommend eating the salad within 1-2 hours if refrigerated.
