Ingredients

  • 2 medium tomatoes, finely chopped
  • 1/4 red onion, finely chopped
  • 1/2 cup fresh cilantro, finely chopped (yes, stems too!)
  • 1 lime juiced
  • 1/2 tsp of fine salt
  • Optional: 1 serrano pepper, finely chopped (for heat)
  • 1 Ripe Avocado
  • 2 slices multigrain bread, toasted

Instructions

  1. Rinse and chop all veggies finely. Don’t skip the cilantro stems—they add a great crunch!
  2. Mix tomatoes, red onion, cilantro, lime juice, and salt in a bowl to create your fresh pico de gallo. Add serrano if you like a little kick.
  3. Toast your multigrain bread slices until golden and crisp.
  4. Slice, pit, and mash half an avocado onto each piece of toast.
  5. Layer on a generous spoonful of pico de gallo. Garnish with extra cilantro or a squeeze of lime. Serve immediately and enjoy!
