Cucumber, Feta & Avocado Toast

Ingredients

  • 1 Ripe Avocado
  • 1/2 thinly sliced cucumber
  • 2 tbsp crumbled feta
  • Chives
  • Olive Oil
  • Salt & Pepper

Instructions

  1. Peel the cucumber and slice it up into very thin slices. You can use the peeler to obtain consistently thin slices.
  2. Cut avocados into quarters, peel and pit
  3. Toast the multigrain bread slices until golden and crisp. Mash 1/2 avocado onto each slice of toast.
  4. Crumble the feta cheese evenly onto the toast. Roll the cucumber slices and place them neatly on top of the toast.
  5. Cut Chives into small pieces and sprinkle on top of toast. Season with salt and pepper. Finish your dish with a drizzle of olive oil.
