Grapefruit, Avocado & Shrimp Salad

Ingredients
- 1/2 dozen deveined shrimp
- 1/2 Semi Ripe Avocado
- 1 Pink Grapefruit
- 1 Tbsp Sour Cream
- 1 Tbsp Heavy Cream
- Chives
- Dill
- 1/2 Lime
- Salt & Pepper

Start by preparing the shrimp. If raw and deveined please cook for 1 min in simmering water. Drain and cover the warm shrimp with ice. Set aside.

If you have a grapefruit segmenter, use it to remove the fruit segments and place them all into large salad bowl. If you do not, use a knife to cut the segments out. Try to get as much grapefruit pulp as possible. Do not add the extra juice to the bowl.

Cut an avocado in half and reserve the one with the pit in the refrigerator. Cut the other half in quarters, peel them and then cut the fruit in even squares. Add to salad bowl. We recommend using a semi ripe avocado for this recipe so that the fruit does not lose its shape when tossed into the salad.

Pat the shrimps dry. Peel the shrimp tails. Reserve 2 shrimp and cut the remaining 4 into small pieces, similar in size to the avocado cubes. Add to the salad bowl.

Mix the sour and heavy cream together to obtain an even mixture. Pour into bowl with the rest of the ingredients.

Rinse Dill and Chives. Finely mince until you obtain 1/2 teaspoon of each and add to bowl.

Mix all of the ingredients together with a spoon. Season with Salt and Pepper.

Place the saved grapefruit shells on individual plates or presentation plate. Plate the salad in the shells with the help of a spoon. If the grapefruit halves are not stable you can cut the bottom part to make it straight. Each half grapefruit should be filled above rim with salad.

Garnish each salad portion with one shrimp, a pinch of cut chives and dill. Squeeze a bit of lime juice on each and place a thin slice of lime as final garnish. We recommend serving within the hour. Please make sure to refrigerate if not served immediately. Enjoy!
