Our Favorite Avocado Toast
Print RecipeEveryone is familiar with the Avocado Toast. An easy and delicious go-to avocado meal that can be prepped in a blink of an eye. From the most simple toast with just avocado to more elaborate versions, everyone always ends up finding a favorite. The versions are limitless but always require good bread, avocados and then your favorite flavors. We chose to showcase our favorite which includes touches of citrus, sweet and sour and of course smoothness. We present to you DavocadoToast!

Ingredients
- 1/4 red onion thinly sliced (pickling)
- 2 thinly sliced radishes (for pickling)
- 1 thinly sliced serrano or jalapeno pepper (optional for pickling)
- 1 Lime for pickling
- 1 loaf of bread
- 1/2 Semi ripe Avocado
- 1 tsp of olive oil
- Salt & Pepper
- Red pepper flakes
- 1 poached egg
- 1 Lemon for zest
- Honey drizzle

Start with pickling the radish, onion and pepper (optional). Rinse radishes and pepper thoroughly. Cut all vegetables into thin slices. Place the slices into a bowl. Juice 1 lime and pour the juice into the bowl along with 1/3 cup of water. Let it sit for at least 30 min. The water will turn a bit pink. This is normal.

Cut medium width slices from your preferred loaf of bread. You can also toast the slices if you prefer that they be crunchy. They will also hold the weight of the avocado and egg better.

For this recipe, you can either use our semi ripe or ripe avocado. We prefer the semi avocado because it is a bit easier to plate. Cut your avocado into two. For this recipe, we will be using only 1/2. We recommend refrigerating the half with the pit to reduce the oxidation of the fruit to a minimum. Use the other half. Cut in quarter and then gently peel the skin off the fruit. If ripe the skin should come right off. Proceed by slicing the fruit, trying to keep the slices together. Gently fan the slices out and place on the toast.

Drizzle olive oil and add salt & pepper to your liking to the sliced avocado. We like to add a bit of spice with red pepper flakes.

Poach the egg by bringing a pot of salted water to a simmering boil. Crack the egg into a small bowl. When the water is ready, stir the water with a spoon to create a tornado like motion. Pour the egg in the center of the whirl. Cook for about 2 min. Using a slotted spoon, "fish" the egg out of the water. You can pat it dry with a paper towel or just wait 30 secs to the water to evaporate. Gently place the poached egg on top of the avocado slices.

For the final touch: Add a few of the pickled onions, radishes & peppers. Zest the previously washed lemon and finish with a drizzle of honey. Enjoy!
