...From Mexico. They are harvested and imported straight to NY where we control and scrutinize the ripening process to perfection. The fruit starts ripening only once picked from the tree. The harvesting triggers the fruit to release ethylene gas which helps ripen the fruit. We let mother Nature take its time to ripen the fruit so that it holds its optimal taste and texture.
.....HASS avocados and may vary in size depending on the season. When ripe, the skin becomes a dark purplish-black and yields to gentle pressure.
Although avocados are available all year, the dry matter (oil content) varies throughout the year making the avocados different in taste and texture. New season avocados are much harder to ripen as they have very low dry matter vs. avocados are the peak of the season which will ripen very fast since they have the highest content in oil.
